I crave chocolate on a regular but I wanted to start my week off by making better choices rather than eating cookies from the vending machine. Trader Joe’s Ground Flaxseed Meal had a recipe on the packaging that didn’t look too complicated so I gave it a go. Most of my ingredients were sourced from Aldi’s or Trader Joe’s.

Ingredients
- 1 cup rolled oats
- 1/2 cup chocolate chips
- 1/2 cup ground flaxseed meal
- 1/2 cup crunchy peanut butter
- 1/3 cup maple syrup or honey
- 1 tsp vanilla extract
Directions
- Combine all the ingredients in a large bowl
- Scoop a portion and roll into bite size balls (This part was really messy so next time, I will likely use an ice cream scoop to shape them.)
- Place on a cutting board/baking sheet for 1-hour in the freezer or overnight in the fridge to set
Taste tested one after they set and it’s filling and rich — def satisfies my chocolate cravings! I would actually adjust the recipe next time to have less maple syrup as it was sweet enough with the chocolate chips. I brought a few to work to have with my morning tea and I had to anticipate that I would give one away a day because all my coworkers enjoyed them so much.
